These cookies are actually made with a box of red velvet cake mix and that’s what makes these so soft and delicious. And as a bonus, it’s what makes this recipe so incredibly quick and easy!
You really just add your eggs, oil, and cake mix to a bowl, stir the ingredients, and they are ready to go onto your pan and into the oven to bake! Their deliciousness and simplicity will rock your world.

After attempting to make these I am OBSESSED with cake mix cookies. I want to make them way too often. Just kidding, there’s no such thing as too often with cookies. But I’m mostly excited to come up with different recipes for cake mix cookies as the possibilities are endless!

Red Velvet Cookies with a Cream Cheese Drizzle
Soft and gooey red velvet cake mix cookies drizzled with a cream cheese icing!
Ingredients
- 1 Box of Red Velvet Cake Mix (I use Betty Crocker 15.25 oz)
- 2 Eggs
- ½ Cup Vegetable Oil
- For the Drizzle:
- 4 oz Cream Cheese, softened
- ½ Cup Powdered Sugar
- 1 Tsp Vanilla
- 3 Tbsp Milk
- Pinch of Salt
- Tools:
- Cookie Scoop
- Parchment Paper
- Plastic or Piping Bag
Directions
- Step 1 Preheat your oven to 350 degrees and prepare two baking sheets lined with parchment paper.
- Step 2 In a large bowl, add your eggs and vegetable oil and whisk together.
- Step 3 Sift your cake mix into the bowl and stir until combined.
- Step 4 Using your cookie scoop, drop your dough about 1 inch apart on the baking sheet. If you don’t have a cookie scoop then it’s about 2 tablespoons of dough.
- Step 5 Bake the cookies for about 10-12 minutes.
- Step 6 Allow the cookies to cool for 2 minutes on the baking sheet and then place them onto a cookie rack to cool the rest of the way.
- Step 7 For the cream cheese drizzle, place the cream cheese into a small mixing bowl and beat using a hand mixer.
- Step 8 Gradually add the powdered sugar and continue to mix.
- Step 9 Add the vanilla, milk, and a pinch of salt and beat until smooth. If needed, to reach the consistency you desire, add more milk in small increments.
- Step 10 Pour the cream cheese glaze into a piping or plastic bag, cut the corner of the bag and drizzle over each cookie. Wait for the glaze to set and enjoy!
