White Chocolate Pumpkin Chip Cookies

These cookies are as delicious as they are pretty! The title is a mouth full but the recipe is easy! These are simply cookies with yummy pumpkin spice flavored chips throughout them, coated halfway in white chocolate, with just a sprinkle of pumpkin spice. Ohhhhh yeah. These. Are. Good.

If you are looking for an easy and delicious cookie recipe that makes it look like you put a lot of effort into it then this is the one for you! Now if only I could transfer this “low effort, gorgeous look” to myself when showing up for work…that would be nice…

I got the idea for these cookies when I was walking down the Walmart baking aisle and saw the pumpkin spice flavored chips. I knew I HAD TO HAVE THEM but wasn’t sure for what yet. But I am so glad I grabbed a bag…or two….okay 3. 

You can use any pumpkin spice flavored chips you want or you could even swap them out for butterscotch or caramel chips for a fun twist! Just have fun with it!

Flavorful pumpkin chip cookies coated in white chocolate and just a sprinkle of pumpkin spice, oh my!

Ingredients
  • 3 1/4 cups Flour
  • 1 tsp Baking Soda
  • 3/4 tsp Salt
  • 1 1/3 cups butter, softened
  • 1 1/4 cups Granulated Sugar
  • 1 cup firmly packed Light Brown Sugar
  • 2 Eggs
  • 4 tsp Vanilla Extract
  • 1 (9 oz) package of Pumpkin Spice flavored chips
  • 1 package of White Melting Wafers (I used the white vanilla flavored wafers from Ghirardelli)
  • 1 tbsp Pumpkin Pie Spice
  • Tools:
  • Wax or Parchment Paper
Directions
  • Step 1 Preheat your oven to 375 degrees.
  • Step 2 Whisk the flour, baking soda, and salt in a medium bowl and set it aside.
  • Step 3 In a large bowl, beat your butter, granulated sugar, and brown sugar on medium speed until combined. Add your eggs and vanilla extract to your mixture and mix well.
  • Step 4 Gradually add in your dry ingredients mixture that you previously set aside and beat on low speed until combined. Stir your pumpkin spice chips into your cookie dough.
  • Step 5 Drop rounded tablespoons of cookie dough onto ungreased baking sheets about 2 inches apart.
  • Step 6 Bake the cookies about 10-12 minutes or until the edges are lightly browned. Cool the cookies on the baking sheet for 2 minutes and then transfer them to a wire rack to cool the rest of the way.
  • Step 7 Once the cookies are completely cool, add your white chocolate wafers or chips to a microwave safe bowl. (I used a glass measuring cup because it was taller than it was wide, which is helpful for dipping your cookies.) Melt your white chocolate per the instructions listed on the package.
  • Step 8 Lay out a sheet of wax or parchment paper. Take a cookie and dip it halfway into the white chocolate. Let the excess white chocolate drip off and then set the cookie down on the wax paper. Sprinkle the Pumpkin Pie Spice onto the white chocolate before the chocolate sets. Repeat for each cookie until you are done!
  • Step 9 Once the white chocolate sets you can enjoy your beautifully delicious cookies! Yay you!
