One of my favorite things to do is make Holiday themed desserts. I think they are oh so adorable and more importantly, delicious! It’s a great excuse to make a sweet treat and get in the Holiday spirit!
I decided I wanted to make something egg shaped for Easter – for obvious reasons. Once I figured out I that I wanted to make speckled egg cake balls all I could picture is how cute they would be when they are served in an adorable easter basket.

My 3 year old twin nieces, Indie and Olive, thought they were adorable too. It helped that they could eat them on the go! Meaning, as they were running around like crazies..! So, if you are interested in a super cute Easter themed dessert and one that stars yummy cake then give this one a try!
So for this recipe, you may need a couple of tools to help you get your speckled egg cake balls looking like speckled eggs.
I used a brand new paint brush to help me give mine a speckled look. I also used new and cleaned easter eggs to help shape mine. You can use your hands and shape them yourself but using the easter egg shell made it a little easier and quicker for me.
To get started, and to make things easier, I used a boxed cake mix. Funfetti mix in fact! Why not make things extra colorful and fun on Easter, right?
Bake your cake according to the instructions on your cake mix box. It doesn’t matter which pan size option you use because we will be tearing it apart soon enough anyway.
Once your cake has completely cooled, cut the outer edges off (that are hard or crispy). I’m not saying to throw them away, you can set them to the side and snack on them along the way. The edges are more difficult to break apart and usually lead to chunkier pieces that are hard to shape and mold. Meaning, you could end up with cake balls/eggs with lumps.
Once you have cut and pulled the edges out of your pan, use your hands and crumble the cake. I have to say, it’s kind of a weird task because it makes me feel like I am destroying the beautiful thing that is cake. However, it is worth it in the end so just have fun with it! After your cake is completely in crumbs, place half of your can of frosting into your cake. Mix it all together. This allows you to make your cake the right consistency to form and keep the egg shape. If you need to add more frosting feel free to do so, just add a little bit at a time until you get the consistency where you want it.
Line a pan with parchment paper and grab your clean easter egg shell. Grab some of the cake mixture and use the shell to help you shape each end into an egg shape. Once done, set the egg shaped cake ball onto your parchment paper and continue the process until all cake balls are made.
Cover with plastic wrap and set your cake ball eggs into the fridge. Let your cake balls cool for 2-3 hours. Get bowls ready for each color of melting chocolate that you have.
Lay out some wax or parchment paper for you to set your cake ball eggs on after dipped. Melt one color of your chocolate per the packages instructions. Dip the cake ball eggs one at a time into the chocolate (I used a fork and a spoon to dip mine) until fully coated and set it down carefully onto the wax paper. Continue dipping until you are ready to move on to the next color of chocolate. Continue the process of melting the chocolate and dipping the eggs until all eggs are coated.
Once your chocolate coating is dry, you can start speckling! To do this, combine the vanilla and cocoa powder. Dip your paintbrush into the mixture and use your finger to flick the paint brush bristles with the mixture so that it speckles each egg. I would suggest practicing on a paper towel first so you can get the motion down. Speckle each egg as desired and let them dry!
Yay! You now have some adorable speckled egg cake balls! Store your cake balls in the refrigerator until you’re ready to serve them. Feel free to serve them up in an easter basket for extra cuteness. 🙂

Speckled Easter Egg Cake Balls
Ingredients
- 1 Box of Cake Mix + Necessary ingredients listed (I used Funfetti Cake Mix)
- 1 Can of Vanilla Frosting
- 3-4 Bags of Candy Melts Chocolate (Amount of bags depends on how many color variations you want)
- 1 Tbsp Cocoa Powder
- 1 ½ Tbsp Vanilla Extract
- Tools:
- 1 Unused Paint Brush
- 1 Easter Egg for Molding or Egg Shaped Molder
Directions
- Step 1 Preheat your oven, prepare cake mix, and bake according to the Cake Mix box you chose.
- Step 2 Let your cake cool once it’s out of the oven.
- Step 3 Cut the outer edges of your cake and set the edges to the side. You don’t have to throw them away — snack on them as you go! The edges are harder to crumble and can cause your cake ball eggs to be lumpy so you want to remove them from the pan.
- Step 4 Once your edges are removed, using your hands, crumble your cake into tiny bits.
- Step 5 Place half of the can of frosting into your crumbled cake and mix together until it’s combined. If you need more frosting, you can add more until it meets your satisfaction – just add a small amount each time so it doesn’t end up being too much. You really just need the frosting to act as a glue so your eggs keep their shape when molding.
- Step 6 Grab a pan and place some wax or parchment paper onto it.
- Step 7 Using your hands or an Easter egg, start forming your cake into an egg shape. I used my hands to start forming the egg and then used each end of the Easter egg to perfect the shape by pushing the cake into it. Once formed, place the cake ball egg onto your pan.
- Step 8 Once all cake ball eggs are formed, cover your eggs on the pan with plastic wrap and set them in your freezer for 2-3 hours.
- Step 9 After your cake ball eggs have chilled, you can start by preparing one color of your candy melts per the bag’s instructions.
- Step 10 Only melt and dip your eggs one color at a time so that the chocolate does not start to harden between each dip.
- Step 11 Dip your cake ball eggs one at a time into the melted candy melts chocolate. I used a fork and a spoon to hold and then cover the egg in chocolate. Set the egg down onto your wax or parchment paper to allow the chocolate to set.
- Step 12 Once you have dipped all of your eggs and the chocolate has set, you can prepare to speckle them! In a small bowl, combine the cocoa powder and the vanilla extract. Stir until combined.
- Step 13 Using your new, unused paint brush, lightly dip the brush into the mixture. Using your finger, flick the bristles towards one egg. It may help to practice first before speckling an actual egg. That way you have your technique down.
- Step 14 Speckle every egg and let them dry.
- Step 15 You are now ready to serve and enjoy your adorable Speckled Easter Egg Cake Balls!
