Day or night these waffle ice cream sandwiches can easily be enjoyed. This recipe takes the classic ice cream sandwich to a whole other level! If you love ice cream and you love waffles, then this a dessert for you!
One of the best things about making your own Waffle Ice Cream sandwiches is just that — YOU CAN MAKE THEM YOUR OWN! I chose to go with a Chocolate covered strawberry theme because I love that flavor combo. And let me tell you, it is amazing. However, you can follow this recipe or you can mix and match with any kind of ice cream that you want! Cookies and Cream? Try vanilla ice cream and maybe add a little whipped cream! Double Chocolate? Mint Chocolate? Go forward my friend, with whatever your little sweet-heart desires.

Okay, so this recipe is actually super easy because you can use Bisquick mix (or your own favorite waffle mix) and add a few ingredients to turn your batter into a chocolate waffle batter!
To make this recipe, you will need: A waffle maker, Bisquick (or any brand) waffle mix, sugar, cocoa powder, water, vegetable oil, eggs, and your favorite brand of strawberry ice cream!
First you will need to go ahead and heat up your waffle iron. I set mine on low and cooked each waffle for about 5-6 minutes. You can also set yours on medium or high and cook for about 4 minutes.
Place all of your waffle ingredients (everything except the ice cream and strawberries) into a bowl and mix them together until blended.
Spray or brush your waffle maker with cooking spray or oil. This makes removing the waffle from the waffle maker MUCH easier.
When your waffle maker is ready, pour about ¾ cup of batter into the waffle maker. Shut the lid and let it cook. Like I stated above, I cooked mine for 5-6 minutes on low. However, your temp and time may vary depending on your waffle maker. Your waffle maker should come with instructions to help you.
Once your waffle is ready, open the lid and remove the waffle from the waffle maker! You can repeat this process and make as many waffles as you want! This recipe makes about 6 waffles.
Once you have your waffles, take one waffle and cut it into the pre-sectioned four pieces. Take one waffle corner and place a scoop of strawberry ice cream on it. You can use the scoop to help shape it if needed! Take a second piece of the waffle and place it on top of the ice cream to form the sandwich! Continue the same process to create more sandwiches!
These can be eaten as a delicious treat and/or as an even sweeter breakfast! I always love a good excuse to add ice cream.
WAFFLE ICE CREAM SANDWICHES: CHOCOLATE COVERED STRAWBERRY
Ingredients
- 1 ½ cups of waffle mix (I used Bisquick)
- 1 cup of sugar
- 1/3 cup cocoa
- ¾ cup water
- 2 tbsp vegetable oil
- 2 eggs
- 1 tub of your favorite ice cream
- ½ cup strawberries
Directions
- Step 1 Start heating up your waffle iron according to its instructions. Mine has setting options and I set it on Low.
- Step 2 Place all ingredients (minus the ice cream and strawberries) in a bowl and mix with a spoon until blended together.
- Step 3 Spray your waffle iron with cooking spray or brush it with oil or butter. Cooking spray seems to get the job done the easiest for me!
- Step 4 Pour about ¾ of a cup of your waffle batter into the waffle iron and close it. Each waffle cooked for about 5 minutes on the Low setting. It may take more or less time depending on your brand of waffle maker.
- Step 5 Have a plate ready and take the waffle out. Be careful, it’s hot! I typically just use a fork to remove the waffle from the waffle maker.
- Step 6 Repeat the process to make the rest of the waffles. Be sure to spray the waffle maker with cooking spray between each batch or else you will struggle to get the waffle out. It will not be pretty.
- Step 7 Use the time between each batch to slice your strawberries and set them aside.
- Step 8 After you have made all of the waffles, cut them into their designated sections, place a scoop of your strawberry ice cream on one of the sections and use a second section to make it a sandwich. Repeat process until done.
- Step 9 Press some of your sliced strawberries into the ice cream and enjoy!
- Step 10 For extra goodness, drizzle some chocolate or caramel syrup over the sandwich!
